Rich Moist Carrot Cake

A classic carrot cake that’s incredibly moist, warmly spiced, and perfectly sweet. Made with freshly grated carrots and simple pantry ingredients, it has a soft, tender crumb and rich flavor in every bite. Perfect on its own or topped with creamy frosting, it’s a comforting homemade favorite for any occasion.

Equipment

Ingredients
  

  • 420 ml Vegetable Oil
  • 100 grams Granulated Sugar
  • 200 grams Light Brown Sugar
  • 6 Eggs
  • 1 tbsp Vanilla Extract
  • 400 grams All-purpose flour
  • ½ tbsp Ground Cinnamon
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • ½ tsp Ground Nutmeg
  • ¼ tsp Ground Cloves
  • 450 grams Grated Carrots
  • 250 grams Chopped Pecan Nuts

Cream Cheese Frosting

  • 250 grams Cream Cheese
  • 200 grams Unsalted Butter
  • 1 tbsp Vanilla Extract
  • ½ tsp Salt
  • 700 grams Powdered Sugar

Instructions
 

  • Preheat oven to 350℉ and grease baking pans
  • In a seperate bowl, measure and sift together flour, cinnamon, baking soda, nutmeg, salt, cloves,and baking powder.
  • In a large mixing bowl, add oil, granulated sugar and brown sugar. Beat the mixture together with a mixer or wooden spoon until combined.
  • Add in eggs and vanilla. Mix until smooth and creamy.
  • Gradually add the sifted dry ingredients to the wet indgredients bowl and mix together until well combined (do not dump all the flour mixture at once).
  • Using a wooden spoon or spatula, fold in the carrots and nuts and mix until well combined.
  • Pour the cake batter into the baking pans. (evenly portion the batter between the pans) and bake for 40 minutes or until they are done. (toothpick inserted in the middle comes out clean).
  • When done, let the cakes cool on a rack.

Cream Cheese Frosting

  • In a mixing bowl and the butter and beat with a mixer until light and creamy.
  • Add in half the powdered sugar and mix until well combined.
  • Add in the vanilla and salt. Mix until well combined.
  • Add in the cream cheese and mix until smooth and creamy.
  • Gradually add in the remaining powdered sugar until the frosting reaches piping consistency (stiff peak)
  • Once cooled to room temperature, layer and frost the cakes using the cream cheese frosting and decorate with nuts or to your own liking.
